Instructions
Cut the butter into small cubes so it's easier to work with. Place the butter in a bowl and beat together with the sugar until it's smooth.
Sieve the flour into the bowl and mix with a wooden spoon, using your hands to form a ball.
Place a little flour on a surface to stop things sticking and roll out the dough ball until it's around ½cm thick.
Using a cookie cutter (any shape) cut biscuits and place on a baking tray. Re-roll the dough to make more cookies.
Place the cookies in the fridge to chill for 10 minutes.
Bake in a preheated oven at 160°C/140°C Fan/Gas mark 3 for 15 - 20 minutes until they are a light golden brown.
